Roasting 101: Finding the Sweet Spot

Think of roasting like baking a cake.

Too little time, and it’s undercooked. Too much, and it’s burnt. Coffee follows the same principle — the art lies in finding that sweet spot where sweetness, acidity, and body balance perfectly.

At its core, roasting is about carefully managing heat, time, and airflow.

Those three variables decide whether a coffee ends up light, medium, or dark, and they completely shape what you taste in the cup.

 

Can Any Coffee Be Roasted Light or Dark?

Technically, yes. But just because you can doesn’t mean you should.

Every coffee has its ideal expression. Some beans shine when roasted light, full of florals and fruit. Others reach their full potential at a medium or dark roast, where sweetness and body take centre stage.

Light Roast: Bright, Crisp, and Complex

Light roasted coffee is roasted for the shortest time, reaching around 207°C. It keeps much of the bean’s original acidity and vibrancy, producing lively, fruit-forward cups with floral or tea-like notes. These coffees are all about clarity — you can literally taste the region they came from.

Light roasts are often single origins, designed to showcase the farmer’s craft and the unique terroir of their region.

Medium Roast: Balanced and Versatile

The result is smooth, approachable coffee that still offers plenty of character. It’s the dependable all-rounder — vibrant enough for black coffee, yet structured enough for milk.

Dark Roast: Bold, Sweet, and Smooth

Dark roasts reach around 220°C and beyond, where natural sugars in the bean caramelise — a process called the Maillard Reaction. This creates those deep, syrupy, chocolate-toned flavours that many people love.

While dark roasts once had a reputation for bitterness, modern roasting technology allows us to develop rich, sweet flavours without harshness. With precise heat and airflow control, a dark roast can be full-bodied and smooth, with a buttery finish and low acidity.
