You pull a shot, and it comes out in 15 seconds instead of 25-30.
The espresso looks thin. Pale. Watery.
You taste it: sharp, sour, thin. No body. No sweetness. Just disappointing.
That's under-extraction. Water's running through the coffee too fast. Not enough time for the good flavours to dissolve. Only the sour, thin flavours make it through.
Here's the weird part: it looks like a machine problem. But it's usually a grind problem.
The Quick Diagnosis
If your shots are running fast and thin, one (or more) of these is happening:
- Grind is too coarse — Water shoots straight through without extracting enough flavour
- Tamping is too light — Coffee's too loose, water finds gaps and runs fast
- Coffee-to-basket ratio is off — Not enough coffee in the basket, water has an easy path through
- Distribution is bad — Coffee's clumpy, water channels through the gaps
Usually? It's the grind.
Watch Kaleb Dial It In
Here's what a proper dial-in looks like. Kaleb's got the Hunter Blend going, shots are running fast, and he works through it systematically.
Adjustment by adjustment.
Testing after each change.
Until the shot is actually right.
This is the kind of real, actionable content we share in the No Bad Coffee Club — not theory, just actual brewing problems solved in real time.
What Kaleb's Doing
The process is simple:
- Pull a shot, time it, taste it
- Adjust one variable (usually grind)
- Pull again, see if it improved
- Repeat until extraction is right
When your shots are running fast and thin, you go coarser on the grind. Bigger particles = slower water flow = more extraction time.
Sometimes it's that simple.
Sometimes you need to adjust tamping pressure or distribution too.
But you change one thing at a time. That way you know what actually fixed it.
Why This Matters
Under-extracted espresso tastes sharp and thin because you're only getting the sour flavours, not the sweet, balanced ones.
The Hunter Blend is designed to taste smooth and sweet with dark chocolate notes. If your shot tastes sharp and thin, you're not getting any of that.
Fix the extraction, and suddenly you taste what you paid for.
