Dried apple. Bakers chocolate. Toffee. Complex enough to be interesting. Delicious enough to drink every day. The kind of single origin that doesn't require a PhD to appreciate, just a good cup and five quiet minutes.

PROCAFE cooperative was founded in 2011 in the mountains of Northern Nicaragua with just 32 farmers. Today it's 165 people strong — 56 women and 109 men — all small-scale farmers working together to get their coffee to the world. They grow shade-grown coffee at elevations between 1,300 and 2,100 metres above sea level. That altitude and those growing conditions are exactly why this cup tastes the way it does. This isn't a big faceless farm. It's 165 people who take enormous pride in what they grow.

What's Washed Process? After picking, the fruit is completely removed from the bean before drying. The result is a cleaner, clearer cup where the natural flavours of the bean shine through without the jammy fruitiness of a natural process coffee. Think precise. Crisp. Balanced.
