Decadent Mocha Brownies - Made Using Hunter Blend

There's nothing like a delicious gooey on the inside, crunchy on the outside brownie, especially when the weather is a little cooler and drizzly.

These delicious Decadent Mocha Brownies, made using our Hunter Blend are the perfect antidote for the gloomy, cold weather battering the country's east coast.

Fox Coffee's Decadent Mocha Brownies

Serves: 12 approx

Ingredients:

  • 125g butter, melted
  • 100g of your favourite chocolate, broken into pieces
  • 1 cup brown sugar
  • ½ cup cocoa powder
  • 2 tbsp** strongly brewed espresso coffee (we've used our Hunter Blend)
  • 4 eggs, lightly beaten
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup walnut halves (optional)

** we've recommended 2 tablespoons however encourage you to adjust based on your preferred style of mocha.

Method

Step 1: Preheat oven to 175-180°C. Grease a slab pan and line with baking paper, allowing a slight overhang at both long ends to pick up once removed from oven.

Step 2: Melt chocolate pieces slowly using your preferred method, however be careful not to overheat. Ensure chocolate and butter is well mixed and smooth before adding brown sugar and oil. Continue stirring with a spoon until smooth. Whisk in eggs and espresso coffee.

Step 3: Using pre-sifted flour, combine with baking powder and cocoa and add to the chocolate (wet) mixture. Gentle combine wet and dry mixes together, taking care not to mix too vigorously, and pour into the prepared pan. Bake for 40-45mins or until you see little cracks on top of the brownie mix.

Step 4: Serve immediately with ice cream or perhaps try a raspberry coulee or whipped cream.
