ROASTERS NOTES:

This one comes from Fazenda Posse da Cachoeira in Guimarânia, in Brazil's Cerrado Mineiro region, run by Antônio Mazzo Júnior. The farm dedicates 72 hectares to coffee alongside 54 hectares of eucalyptus, which isn't just for show, it creates its own microclimate for wind protection and soil balance. Antônio's also cut pesticide use by 56% through integrated pest management, backed up by composting and biological control rather than just spraying less and calling it sustainable.

The farm's certified by C.A.F.E. Practices and Nespresso, and it takes part in Expocacer's development programs supporting better management and production across the region. Reliable, structured, genuinely well run.


Flavour notes

Cherry Chocolate. Hazelnut. Dried Plum.

An aerobic fermented Catuai, meaning the cherries ferment with oxygen present rather than sealed away, which is what builds that rounded chocolate and dried fruit depth without tipping into anything sharp.

Is this only for espresso?

Yes. This one's roasted specifically for the machine, so you get a shot that's rich and syrupy rather than thin or sharp. If you're after filter, it's not this bag.


What's aerobic fermentation and why does it matter?

Unlike sealed anaerobic fermentation, this process happens with oxygen present, which tends to build a rounder, more balanced sweetness rather than anything funky or overripe. It's part of why this coffee lands on chocolate and dried plum rather than something sharper or more fermented-tasting.


Why should I care about the eucalyptus?

It's not just background scenery. The eucalyptus on the property creates a microclimate that protects the coffee from wind and supports soil health, part of a genuinely considered approach to how the whole farm is managed, not just the coffee itself.


Won't a hazelnut, chocolatey coffee taste flat?

Not this one. The dried plum keeps it interesting, adding a fruity depth underneath the chocolate and nuttiness so it's rich without being one-note. Great in milk, but plenty going on black too.


How does it taste?

Cherry chocolate up front, roasted hazelnut through the middle, and a dried plum finish that lingers. Rounded, comforting, and an easy daily drinker.
