This year’s Christmas drop from Fox Coffee brings together three standout origins: a washed Honduran from Finca El Negro, an anaerobic natural from Nicaragua’s Finca Las Hortensias, and a natural Ethiopian from Mofa. That’s layers of depth, sweetness and character in one bag.

Honduras Finca El Negro lives at 1450‑1600 m in Las Botijas, La Paz under Franklin Nolasco’s care. The altitude lets cherries mature slowly and build complex flavour.

Nicaragua Finca Las Hortensias is tucked in Dipilto, Nueva Segovia, producing natural anaerobic lots with Marsellesa variety and a micro‑climate that pushes sweetness and clarity.

Ethiopia Mofa comes from the birthplace of Arabica. It carries the heritage of wild coffee forests and delivers wild fruit complexity and aroma.

In the cup, it’s all cherry brightness, burnt sugar richness, and a warm cooked stone fruit finish. Big flavour without the bitterness.
