ROASTERS NOTES:

Meet Colombia Finca Las Quebraditas. Floral, delicate and genuinely one of the more interesting cups we've put on the shelf this season.

This one comes from Finca Las Quebraditas in Oporapa, Huila, a family venture run by Edinson Argote and Luz Angela Rojas. They farm 18 hectares high in Colombia's central mountain range, where the cool climate slows cherry maturation right down. They also treat fermentation like a science rather than a tradition, running experimental protocols that are repeatable and documented, which is how they get consistent results from something most producers can only hope goes well.

It shows in the cup. This isn't a standard washed Colombian.

Flavour notes

White Peach. Lychee. Rose Blossom.

Controlled fermentation washed, 48 hours in sealed barrels with the mucilage still on, finished with a thermal shock, then sun-dried on solar parabolic canopies with no mechanical drying at all.

You've got questions, we've got answers.

Is this only for filter?

Yes. This one's roasted specifically for filter brewing so you get the florals and delicacy it's built for. V60, Kalita, batch brew, Aeropress or a gentle plunger, that's where it shines.

What's controlled fermentation and why does it matter?

After depulping, the parchment keeps some of its mucilage and ferments for 48 hours in sealed barrels, with water in the tanks regulating the environment. Then a thermal shock of 45 to 50 degrees finishes the protocol. The point of all that control is repeatability. Instead of hoping the fermentation lands well, Edinson and Luz Angela can produce the same distinctive profile batch after batch. That's where the lychee and rose blossom come from.

What's Typica Mejorado?

Despite the name, genetic testing shows it's not really a Typica at all. It's a cross between Bourbon and an Ethiopian landrace variety, which explains the floral, tea-like character. It's become something of a crown jewel of the Andean specialty scene and a favourite among competition baristas.

Will it taste like perfume?

No. Floral here means delicate and aromatic rather than soapy. The white peach gives it proper fruit sweetness to sit on, so the rose blossom reads as fragrance in the cup rather than anything artificial.

How does it taste?

White peach sweetness up front, lychee through the middle, and a rose blossom aromatic that lifts right through the finish. Light-bodied, perfumed and genuinely special. One to brew when you're paying attention.
