Sara Gutiérrez is fifth generation coffee, born into a Quindío family that's been growing coffee since long before "specialty" was a word anyone used. Finca La Helena in Filandia is the older of the family's farms, and it's where that generational knowledge runs deepest. Sara has spent her career pushing the family's coffee forward, chasing better processing, better quality and better outcomes for the people who grow it, all while staying rooted in the land her family has worked for decades.
This lot is Castillo, a variety bred specifically for Colombian conditions, grown at 1,910 metres and washed clean for a cup that's classic Colombian comfort with real depth. In the cup: cocoa, caramel and a creamy, mild stonefruit sweetness that lingers.

What's Castillo, and why does it matter?
Castillo is a coffee variety developed in Colombia to resist coffee leaf rust while still producing an excellent cup. It's become one of the country's most planted varieties for good reason, it's reliable for farmers and consistently delivers the smooth, chocolatey, well balanced profile Colombian coffee is famous for. This lot is a great example of why growers trust it.
Will this taste like a "basic" Colombian coffee, or is there more going on?
There's more going on. Yes, it's got that familiar cocoa and caramel base people love about Colombian coffee, but the creamy stonefruit note lifts it into something with genuine character. This isn't background noise coffee, it's an easy drinking cup that still gives you something to notice.
Is this coffee espresso or filter?
This one is roasted for espresso. The cocoa and caramel hold up beautifully under pressure, especially with milk, while the stonefruit sweetness still sneaks through underneath. It's a proper espresso roast that doesn't get boring in a flat white.
