ROASTERS NOTES:

This coffee comes from Cauca, in the south of Colombia. It's a region that's flatter than most of Colombia's growing areas, which means more consistent conditions and a cleaner cup. It's a mix of lots from farmers near Granja Paraiso 92, owned by Wilton Benitez.


Wilton sources freshly harvested cherries directly from local farmers, then brings them back to his own processing facility near Piendamo, where he ferments for 36 hours before depulping, washing and drying. It's his facility, his process, his standard, start to finish.

Is this only for filter?

Yes. This one's roasted specifically for filter brewing so you get the clarity and delicacy it's built for. V60, Kalita, batch brew, Aeropress or a gentle plunger, that's where it shines.


Why does the fermentation time matter?

36 hours is a longer fermentation than most traditional washed coffees get. It's what pulls out that red grape character and gives the cup more depth than a standard wash usually delivers, without tipping into anything funky or overripe. Wilton's dialled this in at his own facility, cherry to dry, so the consistency is there every batch.


Why is Cauca different?

It's flatter than most of Colombia's coffee country. Less elevation variation across the region means more consistent growing conditions farm to farm, which shows up as consistency in the cup too.


Won't a "delicate" coffee taste weak?

No, delicate here means refined, not thin. Think lemon brightness and soft red grape sweetness rather than a big heavy body. It's precise, not boring.


How does it taste?

Red grape up front, a lift of lemon through the middle, and a body that's light on its feet rather than heavy. Clean, layered, and genuinely easy to drink black.
