Las Lajas is one of the most famous micromills in the country, run by third generation producers Oscar and Francisca Chacón. They were among the first in Costa Rica to experiment with honey and natural processing, and Alma Negra is one of their signature creations.
Cherries are picked super ripe, then dried as whole fruit on raised beds and in a greenhouse over several weeks. The result is a dense, fruit forward coffee with a wild side. Think dried mango and jammy passionfruit up front, layered over mellow dark chocolate, with a wine like acidity and gentle syrupy sweetness through the finish.
It is vibrant without being sharp, complex without being weird and seriously fun to drink.
