ROASTERS NOTES:

This one comes from the Méndez family's Finca El Angel, high up in the volcanic terrain of Apaneca, Ahuachapán. The farm was named in honour of the owner's granddaughter, born right as the land was purchased, and the family have leaned into that legacy ever since, with a 4th place Cup of Excellence finish for their natural-process coffees to show for it. They also put real money back into their workers, medical and dental care, home improvements, holiday support, the lot.

Grown under native shade trees at 1400 masl, this Cuscatleco variety coffee develops a naturally refined sweetness, then gets a fully washed process with an 18-day raised bed dry that pulls out clarity and a genuinely dessert-like profile.

Is this only for espresso?

Yes. This one's roasted specifically for the machine, so you get a shot that's sweet and rounded rather than sharp or thin. If you're brewing filter, it's not this bag.


Why is it so sweet?

A few things stack up here. The Cuscatleco variety is known for a naturally refined, sweet cup. It's grown slowly under shade at altitude, which builds sugar development in the cherry. Then it gets an 18-day dry on raised beds, slower and more controlled than a standard patio dry, which locks in that clarity and sweetness instead of losing it.


What's Cuscatleco?

It's the variety that makes up most of Finca El Angel's plantings. It's known for holding up well in the field and for consistently good cup quality, which is exactly why the family has built so much of the farm around it.


Won't a "washed" coffee be less sweet than a natural?

Not this one. The family's Cup of Excellence pedigree is actually built on their naturals, but this washed lot holds its own. The honey and orange biscuit sweetness comes through clean rather than jammy, so you get sweetness with more clarity, not less.


How does it taste?

Honey sweetness up front, an orange biscuit note through the middle, and a soft stone fruit finish that lingers. Balanced, refined, and genuinely dessert-like in the cup.
