ROASTERS NOTES:

Here's something most people don't know: Honduras used to smuggle its best coffee across the border to be sold as Guatemalan. The quality was there, the reputation wasn't. That's changed. Honduran producers have spent the last decade investing hard in infrastructure, farming practices and processing quality, and the specialty coffee world has started paying attention.

This is a collection of smallholder farms from Santa Rosa de Copan — shade-grown at 1,200 to 1,700 metres, hand-picked and washed the traditional way. In the cup: malt chocolate, plum and honey. Rich, sweet and grounded — exactly what good everyday coffee should taste like.

No complexity required. Just a proper, satisfying cup.

Flavour notes

Malt Chocolate. Plum. Honey.

Washed process. Shade-grown. Sweet, balanced body.

You've got questions, we've got answers.

Who produces this coffee?

This lot comes from a collection of over 1,500 smallholder farms in the Santa Rosa de Copan region, processed through Oscar Gonzalez's mill, a facility he built in 2020 after 30 years of experience in the Honduran coffee industry. Every truck that arrives during harvest is logged and traced. Physical and cup quality are assessed on every lot, and premium prices are paid back to the farmers who deliver the best coffee. It's a system built to reward quality — and it shows in the cup.

Approachable specialty coffee

Specialty coffee doesn't have to mean complicated. The malt chocolate and honey make this warm, familiar and easy to drink. The plum adds a gentle fruit note that lifts it without making it sharp or challenging. This isn't a coffee that demands you think about it. It's a coffee you just enjoy. A proper step up from supermarket beans, without the pretension.

Is this for espresso?

The malt chocolate and honey body pulls beautifully as espresso, smooth, sweet and clean with good crema. It holds up well in milk too, making it a genuinely versatile daily driver.

Why shade-grown?

Shade-grown coffee ripens slower under a canopy of trees, the cherry develops more sugar and complexity before it's picked. It's also better for the surrounding ecosystem. At 1,200 to 1,700 metres in Santa Rosa de Copan, the combination of altitude and shade creates the conditions for the sweetness and balance you taste in this cup. Nothing fancy. Just good farming.
